Warm Potato Salad with Beer Dressing

Here is something I enjoy especially in the Spring and Fall.  Warm potato salad with the beer already there.  On a nice day there is just little that can top it.  And it goes will with Oktoberfest type foods, brats, ribs, steaks, and so much more.

Ingredients, Beer dressing
·         2 Tbl          Olive oil
·         ½ cup        copped onions
·         ¾ cup        beer (get something you like the flavor of, not some light or low cal junk)
·         2 Tbl          Malt or cider vinegar
·         2 Tbl          Dijon mustard
·         ½ tsp         sugar
·         2 strips       bacon
Salt and pepper to taste


Directions:
1.            Cook the bacon.  When done put on side to use as a garnish
2.            Keep 2 tablespoons of fat.  If you don’t have enough then add olive oil.
3.            Add the onions and cook until soft, about 5 minutes
4.            Add the beer. Vinegar, and sugar
5.            Boil for 5 minutes
6.            Put everything into a food processor along with the mustard
7.            While the processor is running add the remaining olive oil
8.            Taste.  You may want some more oil or want to add salt and/or pepper
9.            Crumble the bacon and use as garnish


Ingredients, Potato salad
·         2 ½ lbs       red potatoes, washed off
·         ½ cup        chopped red or yellow onions, finer the chop, finer the salad
·         ¼ cup        chopped parsley
·         2 Tbl          chopped chives

Directions:
1.            Cook the potatoes in boiling and salted water.  You can stick them with a knife or fork to check.  If the utensil goes in easily then the potatoes are done.  It will take about 20 to 25 minutes
2.            Drain them and when you can easily touch them then slice.  Don’t peal unless you really want to
3.            While the potatoes are still warm mix them with the onions, parsley, and dressing.  Don’t over mix or they will break into small pieces.
4.            Garnish with the chives and serve warm or at room temperature.
